Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.
Kielbasa Or Smoked Sausage Skillet Casserole

ingredients
1 pound kielbasa or smoked sausage, cut in 1 inch pieces
6 potatoes, scrubbed and sliced in 1 inch slices
1 bell pepper, sliced
1 large onion, sliced thin
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1 teaspoon coarse salt
1/2 teaspoon sweet paprika
1 cup shredded cheese
directions
Preheat oven to 400 degrees F.
Cover bottom of ovenproof large skillet with olive oil and heat on top of stove.
Add potatoes to skillet and start to brown. Add all vegetables and sprinkle with seasonings. Stir until bottom of potatoes start to brown. Add sausage and stir.
Cover and cook for 40 minutes; remove from oven and top with cheese. Place back into oven, uncovered, until cheese melts.

One of my family's favorites! I use bratwursts instead though. Also, this makes A LOT! I use a 9x13 glass baking dish (it can be done without a oven proof skillet) and it fills the thing about 3/4 of the way up. We always have leftovers, even after my boys (both adult men) have eaten their fill. It reheats well and tastes great after a trip through the microwave. Very economical and easy to make! We like to pair it with a simple green salad and garlic or cheesy bread :)
