Slow Cooker Cajun Sausage & Rice

ingredients
8 ounces kielbasa sausage, cut in 1/4" slices
1 can (14.5 ounce size) diced tomatoes with liquid
1 medium onion, diced
1 medium green bell pepper, diced
2 celery stalks, thinly sliced
1 tablespoon chicken bouillon granules
1 tablespoon steak sauce
3 bay leaves
OR
1 teaspoon dried thyme
1 teaspoon sugar
1/4 teaspoon hot pepper sauce, more to taste
1 cup uncooked instant rice
1/2 cup water
1/2 cup chopped parsley (optional)
directions
Combine sausage, tomatoes, onion, green pepper, celery, bouillon, steak sauce, bay leaves, sugar and hot pepper sauce in crockpot. Cover and cook on LOW for 8 hours.
Remove bay leaves; stir in rice and water. Cook an additional 25 minutes. Stir in parsley if desired.

Loved this! I doubled the amount of kielbasa and only used 1 bay leaf. DH and I really enjoyed this and will definitely make again!

The only thing we'd do differently is stir in a little something for flavor along with the rice. Cooking all day in the crock mellows the flavors so you need to add something towards the end of cooking time to give it a flavor boost. Even just another dose of steak sauce would work great stirred in with the rice. Everything else worked out fine, the veggies were tender and the rice cooked perfectly.
