Bison is a lean, yet succulent cut of meat that is perfect for grilling. Seasoned with salt and pepper, the natural flavors really come through. Grilling for just 3 to 4 minutes on each side yields a juicy, tender steak.

6 filet mignons of bison (buffalo), about 6 ounces each
salt, to taste
freshly ground black pepper
Preheat the grill on high.
Season the bison with salt and pepper on both sides. Grill the bison for 3 to 4 minutes on each side, depending on thickness and the desired degree of doneness.
