1 cup butter
1/4 cup powdered sugar, plus more for coating the cookies
2 cups all-purpose flour
1 cup ground almonds
1 teaspoon vanilla extract
Preheat the oven to 325 degrees F.
Combine the butter, powdered sugar, flour, ground almonds, and vanilla extract in a bowl. Mix until the mixture forms a dough.
Roll the almond cookie dough into small balls. Place the almond balls on a baking sheet.
Place the baking sheet in the oven and bake at 325 degrees F for 35 minutes.
Remove the cookies from the oven and immediately roll them in powdered sugar until well coated. Let them cool on a wire rack. Store the almond balls cookies in an airtight container.

The instructions are not quite correct. I've been making these for about 40 years. You don't roll them in powdered sugar until after they come out of the oven. Roll them while hot. If you have time, roll them a 2nd time after they cool a little.
I think you maybe misread the instructions?
