ingredients
2 pounds Monterey jack cheese, grated
1/4 cup flour
1 1/3 cup beer (good lager, not "light")
1 tablespoon minced jalapeno chilies (or to taste)
tortilla chips, for serving
directions
Place grated cheese in large bowl and toss with flour.
In a saucepan, bring beer to simmer, then reduce heat to low and add cheese by the handful. After each handful, stir mixture until cheese is completely melted before adding the next handful of cheese.
Continue to stir until thick and creamy, but do not boil. Stir in the jalapeno after all cheese has melted.
Serve in a fondue pot or in a heat-proof bowl over a can of Sterno.
