Stewing together chicken and zesty Mexican ingredients and tossing them in a tortilla is a formula that never misses the mark.
2 tablespoons oil
3 pounds boneless, skinless chicken breasts, cut into 1" pieces
1 medium onion, chopped
1 large green pepper, chopped
3 cloves garlic, minced
1 small jalapeno pepper, finely chopped
1 can (14.5 ounce size) Mexican-style diced tomatoes
1/4 teaspoon cumin
1 teaspoon oregano
Heat oil in skillet. Cook chicken pieces until browned. Remove and drain.
Place onion, green pepper, garlic and jalapeno pepper in skillet and saute until slightly cooked. Add all ingredients to crock pot and stir to combine.
Cover cook on Low 7 to 9 hours or on High 3 to 4 hours. Serve on flour tortillas.

I fixed this tonight burrito style with cheese and sour cream. I cooked the ingredients in a large crock pot on low and, because there was not enough liquid, I added a can of Mexican-style tomato sauce and 1/2 cup water. The liquid seemed to steam out during the 7 hours of cooking.

The crock pot helps to meld the flavors together. If you want more pronounced flavor add some additional cumin and/or oregano about 30 minutes before serving. You can also use spicy tomatoes or more jalapeno is you want additional heat, but this recipe is quite flavorful.
