ingredients
1 tablespoon butter
1 medium onion, sliced
1/4 teaspoon salt
1/8 teaspoon black pepper
8 boneless chicken breast halves
1/2 cup flour
8 mushrooms
16 ounces artichoke hearts
1 cup orange juice
1 cup dry white wine or Marsala wine
1 cup ginger ale
2 tablespoons lemon juice
brown rice, cooked
directions
In a skillet, brown onion in butter. Salt and pepper chicken. Roll in flour to cover. Brown quickly in remaining butter.
Place onions in bottom of Dutch oven; layer chicken and mushrooms. Mix liquid ingredients; pour over.
Bake covered for 1 hour at 325 degrees F. Add artichoke hearts; cook for another 30 minutes more. Serve with brown rice.

I think this is supposed to have 8 oz mushrooms, not 8 mushrooms. I used 8 oz fresh sliced and that worked well. 8 single mushrooms would have been odd.
