Beer makes batters better, meat more tender, and sauces more flavorful.

Ready in 20 minutes and packed full of flavor. Simply bake tender chicken breasts in a dressed up picante sauce and serve over rice for an easy dinner.
1 1/2 cup picante sauce
3 tablespoons packed light brown sugar
1 tablespoon Dijon mustard
4 boneless, skinless chicken breast halves
3 cups hot cooked rice
Preheat the oven to 400 degrees F.
In a bowl or large measuring cup, whisk together the picante sauce, brown sugar, and mustard.
Place the chicken in a 2-quart baking dish. Evenly pour the picante sauce mixture over the chicken.
Place the chicken in the oven and bake at 400 degrees F for 20 minutes or until the chicken is cooked through (cook time will depend on the thickness of the chicken).
Remove from the oven. Serve the chicken and picante sauce mixture over hot, cooked rice if desired.

So easy. Chicken was tender and I liked the brown sugar/mustard mixed with picante. I've made just chicken with picante sauce before and always find it a bit bitter. This was delicious. Going to experiment with cooking the rice in the sauce with the chicken for more of a casserole type dish.

I discovered this recipe from the label of Pace Picante. Depending on your tastes, you can choose a Pace Picante that is mild to hot. You could also add your own peppers and even lime to taste. This is one of the best fresh dishes a busy single mom (or dad) can make. Two out of my 3 kids are picky eaters and they love this chicken. I always serve it with fresh steamed green beans, broccoli, or corn on the cob. Ice cream for dessert helps cool off the spiciness.

This is a really good recipe! I make it whenever I can't think of what to cook. The brown sugar makes the sauce taste sweet & we love to serve it over rice, using the sauce as a gravy. So quick, easy & tasty!!
