ingredients
1/2 cup butter
1/2 pound mushrooms, thinly sliced
1/4 cup all-purpose flour
2 teaspoons salt
1/4 teaspoon black pepper
1/4 teaspoon nutmeg
4 medium chicken breast halves, skinless and boneless
1 1/2 cup heavy or whipping cream
1/3 cup white port wine
directions
In skillet over medium-high heat, melt butter and cook mushrooms for about 5 minutes until tender and limp. Remove with slotted spoon to a small bowl; set aside.
On waxed paper, combine flour, salt, pepper and nutmeg. Thoroughly coat chicken breasts on all sides, shaking off excess.
Place chicken in heated skillet and cook over medium-high heat until browned on both sides. Stir in cream, port and mushrooms; heat to boiling. Reduce heat to low. Cover and simmer for 15 minutes or until cooked through and fork-tender.
