If you had a hunch that Maui chicken might include pineapple, good call. Reminiscent of sweet and sour chicken, this slow cooker dish tastes like a bit of paradise.
6 boneless, skinless chicken breast halves
1 can (20 ounce size) pineapple chunks, undrained
1 can (14.5 ounce size) chicken broth
1/4 cup white vinegar
2 tablespoons packed brown sugar
2 teaspoons soy sauce
1 clove garlic, minced
3 tablespoons cornstarch
1/4 cup water
Heat a non-stick skillet over medium heat. Add the chicken and cook on both sides until browned. Place the chicken in the crock pot.
Add the pineapple to the crock pot.
Combine the broth, vinegar, brown sugar, soy sauce, and garlic in a bowl. In another small bowl, whisk together the cornstarch and water. Stir into the broth mixture. Add the broth mixture to the crock pot, covering the chicken.
Cover the crock pot and cook on high heat for 3-4 hours or until the chicken is cooked through. Serve the chicken with the pineapple sauce.

This is great! I added a little more corn starch to get a thicker sauce for serving it over a bed of rice.
