Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.
Low Carb Cuban Style Chicken

ingredients
2 boneless, skinless chicken breast halves
1 can diced tomatoes with jalapenos
1/3 cup onion, diced
1 can black beans, rinsed and drained (look for Eden brand ones)
1/2 cup frozen corn (optional, corn adds carbs)
1/3 cup green bell pepper, diced
1 clove garlic, minced
1 teaspoon cumin
salt and pepper, to taste
directions
Spray skillet with olive oil or other non-stick cooking spray. Saute chicken about 3 minutes on each side. Remove from pan and set aside.
Saute onion, garlic and green pepper in pan drippings until onion is tender. Return chicken to pan, cover and simmer about 20 minutes.
Remove lid and simmer about 10 minutes more, stirring occasionally, until chicken is cooked through. Serve over a bed of lettuce (as much as you want!). Top with a little cheddar cheese and dollop sour cream.

Although some of the ingredients did not make it to the instruction the results were pretty good. I added 1/2 a can of tomato sauce and did not rinse the beans. As far the cooking time it takes less than 20 minutes in when re-adding the chicken if you let it go too long the chicken will dry out.

I'm a pretty good cook but I always find it helps when the directions complement the ingredients (half the ingreds. were omitted in the directions!). Also, I made the following changes: used adobo seasoning on the chicken, used 1/2 the recommended tomatoes/jalepenos and 1/2 the black beans, added a small handful of chopped calamata olives and a pinch of capers. I spooned everything over some rice. Also, I cut into the chicken about 15 minutes into the simmering process and it was already done. VERY tasty overall!
