ingredients
4 flash-frozen boneless, skinless chicken breast halves 2 cans (15 ounce size) flavored stewed tomatoes (cajun, mexican, italian, your choice)
directions
Place the chicken breasts (still frozen) in the crock pot. Evenly pour the tomatoes over the top of the chicken.
Cover the crock pot and cook on high for 2 hours. Turn the heat to low and cook for 4-6 more hours or until the chicken is tender.
Remove the chicken from the crock pot and place on cooked rice on individual serving plates. Spoon the tomatoes over the top.
If you use unflavored stewed tomatoes you can add in your own seasonings as desired.

I had kinda just made this recipe out of desperation as I didn't have many ingredients on hand for dinner last night. Have to say, I was super happy with it. I used Mexican diced tomatoes as that's all I had (plus we just prefer diced to stewed) and added a few extra seasonings to give it an extra punch. I also had thawed the chicken already so I just cooked it on low for 4 hours instead of doing the 2 hours on high. Perfect! Whole family ate it happily and I will plan on it again.

This made a nice dish over rice as recommended. The kids loved it. My husband however, wanted a more filling main dish and we didn't make enough rice. He found enough leftover noodles that he enjoyed "seconds." This recipe looks like it could easily be turned into a tasty, simple soup if you add diced celery, carrot, raw potato, or what-have-you, and about 1/3 cup quinoa tossed into the crock pot during last half hour. Will try that next time.
