1 1/2 cup orange juice
1/2 cup raisins
1/2 cup orange marmalade
3 thick, boneless skinless chicken breast halves, cut into 1-inch chunks
2 tablespoons olive oil
4 tablespoons brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon freshly grated ginger
1 cup rice
1/2 cup flaked coconut
Salt and pepper to taste

directions

In a saucepan, heat orange juice, raisins and marmalade until marmalade melts. Remove from heat and stir in brown sugar, cinnamon, ginger, and rice; set aside. Heat olive oil in pressure cooker and add chicken chunks. Lightly brown. Pour in orange juice mixture.

Lock lid and bring to full pressure. Adjust heat, maintaining pressure, and cook for 10 minutes. Quick-release pressure. Stir in coconut and season to taste with salt and pepper.

    Not clear if the rice is cooked or uncooked. If uncooked,soaks up all the liquids so no steam for pressure cooking!

    • There is plenty of liquid to get the pressure cooker going and build up steam before the rice absorbs it. If you put cooked rice in it will turn to mush and basically disintegrate.

    My wife loved this, but I toned down the sugar content based on other reviews. I completely left out the orange marmalade, I only used half the brown sugar in the recipe, and used a full tsp. of ground ginger powder. Tasted great. The only improvement that could be made would be the presentation of it. Don't let the dull brown color (from the cinnamon) fool you, though. It's a delightful dish.

    Used Cranberries instead of raisins. It came out perfect!! Tasted like we went to Hawaii for dinner. Dont over cook the oj and marmalade. It took like 3 minutes to disolve and the cranberries were not cooked. But when the cooker was done, everything was cooked to perfection!

    I think this would work better without the brown sugar and maybe with a tablespoon if dark rum or 1 tsp. rum flavoring instead. That would cut the sweetness but still give you the sugar cane taste. maybe replace some of the orange juice with water, too.

    I thought this recipe was wonderful!! My daughter was a little put off by the sweetness. I've made it a few times now and it's been great every time! It's even great as a leftover!

    Yuck. Too much sugar content so the sauce burned under pressure. The meat needed seasoning badly. Won't make again.
