ingredients
6 skinless chicken breast halves
1 can (8 ounce size) sliced mushrooms
1 onion, chopped
1 can (6 ounce size) ripe or greek olives
1 can (15 ounce size) tomato sauce
1 can (6 ounce size) tomato puree
1 tablespoon minced fresh garlic
1 tablespoon lemon juice
1 teaspoon dried oregano
1/2 cup red wine or brandy, optional
salt and pepper to taste
directions
Place the chicken in the crock pot. Top with the mushrooms, onion, and olives.
In a bowl, combine the tomato sauce, tomato puree, garlic, lemon juice, oregano, and wine. Mix well then pour over the chicken.
Cover the crock pot and cook on low heat for 5 hours or until the chicken is cooked through.
Serve the chicken and sauce over cooked rice. Adjust seasoning as needed with salt and pepper.

I love this recipe but the cooking instructions given are kinda unnecesary. No need to bake the chicken separately - that's what the crock pot is good for! Just put them in with the sauce and cook longer. I usually do high for 3 hours but on low should be about 6-7, it will depend on how thick the chicken is. If you cut up the chicken into strips then it will take less time, just stir it occasionally.
