Tomato Vegetable Sauce

This is an easy, all purpose red sauce that can be used as a pasta or pizza sauce. You can also use it in any recipe calling for canned tomato sauce - it's that versatile! Plus it has extra vitamins from the secret ingredient (carrots!) in it so it's a healthier option. It goes great in either vegetarian or meaty lasagna recipes, and makes a simple spaghetti sauce as is or add some browned meat to make a heartier meal.

ingredients

1 tablespoon extra virgin olive oil
4 cloves garlic, finely minced
1 small onion, finely chopped
2 carrots, peeled and grated
1 red or yellow bell pepper, seeded and finely diced
1 can (28 ounce size) crushed plum tomatoes
14 ounces water
salt and pepper to taste
2 tablespoons thinly sliced fresh basil leaves

directions

Heat olive oil over medium heat in a large skillet or saucepan. Add garlic and onion and cook until it starts to soften about 2-3 minutes. Add the bell pepper and carrots and saute about 5 more minutes until vegetables soften.

Stir in crushed tomatoes and water, increase heat to medium high and cook, stirring often, about 20-25 minutes, until sauce thickens.

Season to taste with salt and pepper and stir in fresh basil. Use on top of your favorite pizza or pasta.
