Spicy Green Tomato Chutney

ingredients
2 pounds firm green tomatoes, cored and cut in to 1/2-inch slices
2 large green cooking apples, peeled cored and diced
1/2 pound tiny pickling onions, peeled
1 cup firmly packed dark brown sugar
1/2 cup raisins
1 1/2 tablespoon minced crystallized ginger
2 teaspoons crushed red pepper
3 cloves garlic, peeled and minced
1 1/4 cup cider vinegar
directions
Combine all ingredients in a large heavy stockpot or Dutch-oven. Stir together well. Bring to a boil. Reduce heat and simmer for 50 minutes or until very thick: stirring frequently.
Ladle in to hot sterilized jars leaving 1/2-inch head space. Cover at once with metal lids and screw on bands tightly. Process jars in boiling water bath for 15 minutes.

This is a really fantastic chutney! I made a few small changes, such as dicing the tomatoes and using chopped shallots rather than the small onions, but the result was great! It seems very spicy at first, but settles into a perfect balance. I will make this recipe again and again.
