2 small Red Delicious apples or other eating apple, cored and chopped
1 pear, cored and chopped
1 fresh tomato, chopped
1/2 cup diced tomatoes with jalapeno peppers (canned)
1/2 cup chopped red onion
3 tablespoons brown sugar, or more to taste
4 thin lemon slices, seeds removed
3 tablespoons red wine vinegar
1/4 teaspoon minced fresh ginger root
1/4 teaspoon ground allspice
1 pinch salt
GARNISH
1/2 lemon, juiced
1/2 teaspoon finely chopped lemon zest
directions
Combine the ingredients in a small saucepan and bring to a boil. Cover loosely, reduce heat, and simmer for 45 to 60 minutes, stirring occasionally.
Remove apple mixture from heat and let stand until cool enough to cover. Store in the refrigerator, covered, for up to 5 days.
Serve cool, not chilled. Brighten with a squeeze of lemon and a mince of lemon zest. Serve with grilled meats.
