ingredients
1/3 cup all-purpose flour
1/3 cup whole-wheat pastry flour (can use all-purpose)
1/4 cup cornmeal
1 tablespoon granulated sugar, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
1 teaspoon granulated sugar
2 teaspoons baking powder
3/4 teaspoon salt
1/4 teaspoon dried oregano
1/4 teaspoon pepper
2 large eggs
1 cup mashed potatoes
1/3 cup milk
1/4 cup minced green onion
1/2 cup finely chopped red bell pepper
directions
Preheat oven to 400 degrees F.
In a large bowl, whisk together flours, cornmeal, sugar, baking powder, salt, oregano and pepper.
In a medium bowl, whisk together eggs, potatoes and milk. Pour into the dry ingredients and sprinkle with green onion and red pepper and stir just until combined.
Evenly divide batter between wells of a muffin tin lightly coated with nonstick spray; add a little water to any empty wells to prevent them from warping.
Bake until a toothpick placed in the center comes out mostly clean with a few moist crumbs attached, about 13 to 16 minutes. Remove and place on a wire rack to cool for 5 minutes before turning out onto a wire rack.
