The name, vodka, comes from the Russian phrase zhiznennaia voda, or "water of life". It can be made from everything from potatoes to beets. It's considered to be fairly flavorless which makes it a great liquor for mixed drinks.


1 can (14.5 ounce size) diced tomatoes, drained, liquid reserved
1/4 cup tomato liquid
2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon sugar
1 teaspoon dried oregano
1/2 teaspoon salt
1 egg
1/4 cup butter, melted
1/2 cup shredded Mozzarella cheese, divided
2 tablespoons grated Parmesan cheese, divided
In a bowl, combine the flour, baking powder, sugar, oregano and salt.
Combine the egg, butter, tomatoes and reserved juice. Stir into dry ingredients just until moistened, Stir in half each of the mozzarella cheese and Parmesan cheese.
Fill greased jumbo muffin cups 2/3 full. Sprinkle with the remaining cheeses.
Bake at 350 degrees F for 20 to 25 minutes or until a toothpick comes out clean. Cool in pan for 5 minutes before removing to a wire rack.
Serve warm.
