ingredients
1/4 cup pitted black olives, chopped
1/4 cup roasted red bell peppers, seeded and diced
1/4 cup roasted yellow bell peppers, seeded and diced
2 tablespoons crushed red pepper flakes
1 tablespoon fresh garlic
2 tablespoons fresh thyme
1/4 cup chopped fresh parsley
2 tablespoons red wine vinegar
1 tablespoon honey
3 tablespoons olive oil
salt and pepper, to taste
directions
In a mixing bowl, combine all ingredients and season to taste with salt and pepper. Refrigerate for 2 hours.
Bring to room temperature before serving. Serve with grilled chicken or fish.
