under 30 minutes
ingredients
2 small dried red chiles (pick according to your heat level)
2 cloves garlic (or small if you don't like as much garlic)
1/2 teaspoon sugar
2 tablespoons fish sauce
1 tablespoon rice wine vinegar
1 tablespoon lime juice
directions
Mash chiles and garlic together (or blend in food processor). Mix fish sauce, vinegar and juice. Dissolve in sugar. Mix in chiles and garlic.
Usually used as a dipping sauce. Take a leaf of lettuce, put on some rice noodles, veggies and meat, roll up and dip. Or if the lettuce is coming shredded or chopped, pour over the top. Also very good for dipping spring rolls.
