Cantaloupe Bread

ingredients
3 eggs, beaten
1 cup vegetable oil
2 cups sugar
3 teaspoons vanilla extract
1 cantaloupe, cut into 2" chunks and pureed
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
3/4 teaspoon baking powder
2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1 cup chopped walnuts
directions
Mix eggs, oil, sugar and vanilla. Add pureed cantaloupe to mixture. Sift dry ingredients. Add to liquid.
Pour into two greased and floured 9" x 5" loaf pan. Bake at 325 degrees F for 1 hour or until done.
