2 cups unbleached flour
1 cup granulated sugar
1/2 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
2 egg whites, whipped
1 teaspoon vanilla extract
1/2 cup applesauce, at room temperature
2 cups strawberries*, chopped

directions

Preheat oven at 350 degrees F. Prepare pan with cooking spray and flour.

In a mixing bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt.

In another bowl, combine egg whites, vanilla, applesauce, and strawberries. Mix dry ingredients with wet ingredients just until moistened. Pour into prepared pan and bake for 25 minutes depending on pan size.

* If using frozen strawberries, measure them after defrosting and draining them.

    I made some changes but it came out great. I replaced 1 cup of the 2 cups of strawberries with a mashed banana. I replaced 1/4 cup of the 2 cups bleached flour with coconut flour. replaced 2 egg whites with 2 eggs. Baked at 350 for 40 minutes. It is delicious

    I just made this bread today. It definitely takes longer than the 25 minutes that this recipe says (I'd say at LEAST 35 minutes in the oven) but it's delicious. It's very cinnamon-y, so I was thinking that next time I would substitute apples for strawberries, it would taste SO good. =]

    This bread took much longer to bake than stated in the recipe. I used a standard loaf pan and it took 55 minutes! The flavor was fantastic, however and the bread was very moist.

    I used whole wheat flour instead. It took almost an hour to bake in a standard loaf pan.

    This bread is moist and delicious. The second time I made it, I experimented and substituted a cup of mashed banana for one of the cups of strawberries. That turned out pretty well too. Sweet!

    Yum! I made these into muffins actually and they were delicious. They were VERY moist, which I love.
