ingredients

3 tablespoons canola oil, divided
3 eggs, beaten lightly
1 cup green onions, with tops, chopped
2 teaspoons garlic, chopped finely
1 teaspoon fresh ginger root, chopped finely
5 cups cold cooked rice
3 ounces fully cooked ham, diced
3 tablespoons soy sauce
1/4 teaspoon ground white pepper

directions

Heat large nonstick skillet or wok over medium-high heat until hot. Add 1 tablespoon oil; swirl to coat pan.

Pour in eggs. As eggs begin to set, push cooked portion toward center of pan, allowing uncooked portion to reach bottom.

When set, turn eggs over and cook second side until done. Cut in small pieces and set aside.

Heat remaining 2 tablespoons oil in same pan over medium heat until hot. Add green onions, garlic and ginger; stir-fry 1 minute.

Add rice, ham, soy sauce, cooked eggs and pepper. Mix lightly to combine. Heat through.
