ingredients
1 pound short ribs
1 tablespoon cornstarch
1/4 carrot, sliced into 1-inch pieces
1/4 onion, cut into 1-inch pieces
1/4 red bell pepper, cut into 1-inch pieces
1/4 yellow bell pepper, cut into 1-inch pieces
5 cups water
2 cups sugar
1 cup vinegar
1 cup soy sauce
1/8 pineapple, could be canned
1 tablespoon toasted sesame seeds
4 cups peanut oil
Tempura Batter
2 cups water
some ice
2 cups tempura mix
directions
For Sauce: Put water, sugar, vinegar and soy sauce in a small pot. Add carrots, peppers, onions and mix in, cooking for five minutes until vegetables are semi-soft. Add cornstarch and mix.
For Beef: Cut short ribs into strips. Batter beef in cornstarch before dipping beef in tempura batter. Flash fry in peanut oil an ounce at a time and drain meat on a paper towel. Then fry one more time.
Place fried beef on a plate and pour sauce on top. Top with fresh cut pineapple and toasted sesame seeds. Serve with rice.
