2 bottles (12 ounce size) beer
1/4 cup firmly packed light brown sugar
2 teaspoons dry mustard
2 teaspoons garlic powder
4 cups barbecue sauce
1/2 cup rice vinegar
1/2 cup yellow mustard
1/2 cup honey
1 orange, cut into 1/4-inch-thick rounds
1 medium white onion, cut into 1/4-inch-thick slices
4 pickled jalapenos, cut into 1/4-inch-thick rings
2 canned chipotle chiles in adobo sauce, drained and chopped
12 pounds lean beef short ribs
sea salt and freshly ground black pepper to taste

directions

Combine the beer, brown sugar, mustard and garlic powder in a medium-size bowl and stir until well blended. Add the barbecue sauce, vinegar, mustard and honey and stir until smooth. Put the orange, onion, jalapenos and chipotle peppers in the slow cooker.

Season the ribs with salt and pepper, and arrange them on top. Pour on the sauce, completely covering the ribs. Or, if you have a round cooker, stack the ribs, alternating them with sauce. Cover and cook on LOW until tender and the meat starts to separate from the bone, 7 to 9 hours.

Transfer the ribs to a platter and set aside. Let the sauce cool a bit, then spoon the liquid fat off the top and discard.

Serve immediately or place the ribs on a hot grill to finish off and give the ribs more color. Strain the sauce through a fine-mesh strainer and serve on the side.

    Hands down one of the best short ribs I've ever had. Make that possibly one of the best recipes! The sauce that the ribs cook in is delicious and the ribs are falling off the bone when they are done. It's got a nice smoky heat to it from the chipotle. Just amazing.

    i had all the ingrediants but the pickled jalapenos. i slow cooked it for about 8 hours and the meat was falling off the bone. the sauce was spicey and sweet. i did substitute Splenda Brown Sugar and brown mustard as there was no yellow to be had in the house. i served it with brown rice and a salad. i made this on a Sunday and we will get another meal out of it. A real winner

    I've cooked beef short ribs for decades, and this recipe is my new favorite. I cooked them as directed in the slow cooker for 9 hours or so. I finished them off on the grill, but didn't find that absolutely necessary. If you do, keep the grill on low since the meat is very very tender. I removed excess fat and boiled the sauce for 15 minutes while preparing a side dish, and this helped blend the variety of flavors in the sauce.

    Wow! These were the best short ribs I`ve ever cooked. I`m not sure why the recipe warranted a 4 for difficulty though as it only took about 10 minutes to throw everything in the crockpot. It was so easy.I did`nt find it necessary to finish the ribs on the grill as they looked real nice right out of the pot. Besides that, they were falling off the bone- they were that tender. I cooked mine for about 9 hours. Wonderful flavor combo.

    • I'm guessing our editors gave it a 4 diffuculty rating because of the multiple cooking methods used (crockpot and grill).
