1 tablespoon vegetable oil
3 1/2 pounds beef short ribs
4 medium potatoes, peeled, quartered
1 large onion, cut into wedges
4 medium carrots, sliced
1 cup water
1 cup ketchup
1/3 cup red wine vinegar
1 tablespoon paprika
1 teaspoon curry powder
1/2 teaspoon chili powder
1/2 teaspoon dry mustard
2 teaspoons salt

directions

Heat the oil in a large skillet over medium-high heat. Add the short ribs, in batches if needed, and brown on all sides.

Add the potatoes, onions, and carrots to the crock pot. Place the browned ribs on top.

Mix together the remaining ingredients in a bowl or large measuring cup and whisk well to combine. Pour over the ribs and vegetables.

Cover the crock pot and cook on low heat for 6-8 hours or until the beef is tender and the vegetables are cooked.

Serve hot.

    This was definitely one of the more flavorful crockpot recipes I've ever had. Just incredible flavor and the ribs were falling off the bone tender. I lightly floured the ribs first and browned them but that's just a matter of personal preference I think.

    I tinkered with a few small things, I used turmeric rather than curry powder because I usually make my own as needed and didn't have any. i find commercial curry powder not very satisfactory. And I added two tablespoons of Worcestershire sauce. At this time of year I'm usually meat adverse and I had two servings. And we ate it ALL. it was truly yummy. And a great come back for dealing with what i thought were steaks when i got the bag out of the freezer. (and then discovered they were short ribs...)
