ingredients
1 pound sliced deli-style corned beef
1 jar (16 ounce size) sauerkraut
5 ounces Swiss cheese
4 tablespoons sugar-free mayonnaise
1 tablespoon dill or Splenda sweetened relish
Thousand Island Dressing
5 tablespoons mayonnaise
1 tablespoon sugar-free ketchup
2 tablespoons sour cream
1 teaspoon dill pickle relish
1/2 teaspoon Splenda sugar substitute
directions
In a large casserole dish (or in separate ramekins) sprayed with cooking spray, layer thin slices of corned beef. Drain sauerkraut of half of its juice and lay atop corned beef.
Top with the Swiss cheese layer and bake at 350 degrees F for 15 minutes (10 minutes for ramekins) or until cheese is melty but not liquidy.
While dish is baking, in a separate bowl mix Thousand Island Dressing, mayonnaise, and relish. Remove casserole dish from oven, slice in serving-size squares and top with dollops of dressing mixture.
To make the Thousand Island Dressing: Combine mayonnaise, ketchup, sour cream, relish, and Splenda. Mix well, keep refrigerated.
