Beef Stroganoff With Dill And Sour Cream

Fresh dill separates this stroganoff from the crowd. Classic creamy mushroom sauce over strips of beef is plenty tasty on its own, but the dash of dill really brings out the flavor and pairs nicely with the cool sour cream.

4 tablespoons butter or margarine
1 1/2 pound lean stew beef or beef tips, cut into thin strips
1 cup chopped onion
4 ounces sliced fresh mushrooms
3 tablespoons all-purpose flour
2 cups beef broth
2 teaspoons minced fresh dill
1/2 teaspoon salt, or to taste
1/8 teaspoon black pepper
1 cup sour cream

directions

Heat a large skillet over medium heat. Add the butter. When it melts, add the meat (in batches if needed) and cook, stirring, until browned. Remove the meat with a slotted spoon and set aside to keep warm.

Add the onion and mushrooms to the skillet. Cook, stirring, for 5 minutes or until the onion is soft. Stir in the flour.

While stirring, add the broth. Cook, stirring frequently, until the sauce is thickened (about 3 minutes).

Add the beef back to the skillet. Stir in the dill.

Lower the heat to low and add the sour cream, salt, and pepper. Cook just until the sour cream is heated (you don't want it to curdle so keep the heat low).

Serve the beef stroganoff with dill and sour cream over rice or noodles.
