Shrimp scampi - fancy, right? Not with this recipe, but anybody you make this for doesn't need to know that! White wine, garlic, and lemon juice give this pasta dish classic flavor while red pepper flakes provide a fiery twist.
3 tablespoons olive oil
12 jumbo shrimp, peeled and deveined
2 tablespoons minced garlic
1 tablespoon red pepper flakes
2 tablespoons lemon juice
2 tablespoons white wine
1 teaspoon salt
3 tablespoons unsalted butter, cut in bits
2 tablespoons fresh parsley, chopped
Heat the oil in a skillet over medium heat. Add the shrimp and cook, stirring, for about 4 minutes.
Add the garlic, crushed red pepper, lemon juice, wine, and salt. Stir well then cover the skillet and let cook for 3 minutes.
Remove the cover and whisk in the butter until melted. Remove the skillet from the heat and stir in the fresh parsley.
Serve immediately over cooked rice or pasta.

I haven't made this with these ingredient amounts, but have made it in the past with these exact ingredients. This is the classic way of preparing scampi. If however you'd like to kick it up a notch, just buy the shrimp with shells on and when removing them to clean the shrimp, reserve the shells. Place them in a small saucepan with just barely enough very lightly salted water to cover. Bring to a boil and simmer for at least a 1/2 hour.Drain in a strainer to reserve the broth, pressing out any liquid from the shells in the strainer, then discard shells. You want to end up with about 1 cup of shrimp broth when finished. Then after adding the wine and lemon juice, cook off the alcohol for a minute or so then add the shrimp broth, and proceed with the recipe. This will give the dish a greater Shrimp flavor. To be honest I'd probably also add a bit more oil and/or butter as well as a bit extra garlic.

I wish there was a way to give this recipe 6 stars. Served with spaghetti, Italian mixed vegetables, and garlic bread; this made a wonderful lunch.
