Shrimp skewers marinated in olive oil, lemon juice and garlic are a mouthwatering summer treat. They go perfectly with rice and a refreshing grilled fruit like pineapple.

1/4 cup olive oil
1/4 cup lemon juice
1 tablespoon minced garlic
ground black pepper, to taste
crushed red pepper flakes, to taste
1 1/2 pound medium shrimp, peeled and deveined
Combine the olive oil, lemon juice, garlic, black pepper, and crushed red pepper in a zip-top plastic bag or other non-reactive container. Add the shrimp, seal the bag, and turn to coat the shrimp in the marinade. Place the bag in the refrigerator for 30 minutes. Do not marinate the shrimp for more than 1 hour.
Meanwhile, preheat the grill to high heat.
Remove the shrimp from the marinade and thread the shrimp on metal skewers or wooden skewers that have been soaked in water.
Grease the grill. Place the shrimp on the grill and cook for 2-3 minutes per side or until cooked through.
Serve the grilled shrimp scampi immediately.
