French-Fried Shrimp

ingredients
2 pounds unpeeled medium-size fresh shrimp
1 cup all-purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
2/3 cup water
3 tablespoons lemon juice
1 tablespoon vegetable oil
1 large egg, lightly beaten

directions
Peel shrimp, leaving tails intact; devein, if desired.
Combine flour, baking powder, and salt in a medium bowl. Add water lemon juice, oil and egg. Stir until smooth.
Pour oil to depth of 2 inches into a Dutch oven. Heat to 375 degrees. Dip shrimp into batter, and fry, a few at a time, until golden. Drain on paper towels.
