Serve these crispy deep-fried shrimp as an appetizer or main dish with tartar sauce, chili sauce, ranch dressing, or other dipping sauce.

4 pounds large shrimp, peeled and deveined
1 teaspoon salt
1 teaspoon ground black pepper
1 1/2 cup vegetable oil
8 eggs, beaten
1 1/2 cup all-purpose flour
1 teaspoon baking powder
Combine the shrimp, salt, and pepper in a bowl. Mix well.
Heat the oil in a deep skillet to 360 degrees F.
In a shallow bowl, whisk together the eggs, flour, and baking powder until smooth.
Dredge the shrimp in the egg mixture, letting any excess drip off. Add to the hot oil and cook, turning as needed, until golden brown.
Remove the cooked shrimp with a slotted spoon and let drain on paper toweling.
Serve with your favorite dipping sauces.
