Dipping Sauce
7 ounces ketchup
2 teaspoons mayonnaise
4 tablespoons whipping cream
1/8 teaspoon garlic powder
Fried Shrimp
1 pound extra large raw shrimp
1 sleeve saltine crackers, very finely crushed
1/2 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon garlic powder
2 egg whites
2 teaspoons cold water
peanut oil
fresh lemon wedges
Prepare the dipping sauce by whisking together the ketchup and mayonnaise in a bowl. Stir in the cream and garlic powder and mix until the sauce is uniform in color. Cover the bowl and refrigerate while you prepare the shrimp.
Peel and devein the shrimp, leaving the tail on. Set aside.
Place the cracker crumbs in a shallow dish. Mix the salt, paprika, and garlic powder in.
In another shallow dish, whisk together the egg whites and water
Heat about an inch of oil in a heavy skillet to 350 degrees F (or use a deep fryer).
Dip the shrimp in the egg mixture and coat completely, let any excess drip off. Next dredge the shrimp in the crumbs, patting gently so the crumbs adhere.
Place the shrimp in batches in the hot oil and cook for 3 minutes or until golden brown. Remove from the oil and place on paper toweling to drain. Repeat with remaining shrimp.
Serve the shrimp hot with the dipping sauce and lemon wedges.
