1 1/3 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/8 teaspoon ground red pepper
1 pound catfish fillets
non-stick cooking spray
oregano
thyme

directions

Combine first 7 ingredients. Sprinkle mixture evenly on both sides of fillets.

Place fillets in a grilling basket coated with cooking spray. Place basket on greased grill rack over medium-hot coals (350 to 400 degrees F). Grill, covered, 4 minutes on each side or until fish flakes easily when tested with a fork. Transfer to a serving platter. If desired, garnish with fresh oregano and thyme.
