Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

Hi All ... I loved the title of this recipe, HAMBURGER CUPCAKES," so much that I adapted it for us VEGETARIANS ... Started with the bread as described in the recipe and instead of the ground beef with all the delicious ingredients mentioned, I used a well known recipe for "Special K Loaf" which primary ingredients are: 1 qt cottage cheese, 5 eggs, 1 pkg Lipton onion soup, 1 stick butter/margarine - melted, and lastly 1 c pecan chips & 5-6 cups Kelloggs Special K Cereal. Mix up, scoop it in the bread cups, and bake at 375F for 50 minutes. To top it all off, I used a sweet cap of Ketchup and brown sugar, stuck on the broiler for 5 minutes or until bubbly. That's it - vegetarian style ... Enjoy!
