ingredients
1 cup ham
12 eggs, beaten
3 ounces sauteed mushrooms
Sauce
1 tablespoon butter
2 tablespoons flour
1/2 teaspoon salt
1/8 teaspoon black pepper
2 cups milk
1 cup processed cheese product, cubed
Topping
1 1/2 cup bread crumbs
1/8 teaspoon paprika
3 tablespoons butter
directions
Fry the ham in a skillet; add in the beaten eggs. Scramble until just set.
For Sauce: Melt butter. Blend in flour, salt and pepper until smooth. Add milk slowly, stirring until combined. Cook and stir. Stir in cheese until melted.
Fold sauteed mushrooms and eggs into cheese sauce.
Place in greased 9 x 13 inch dish. (Recipe up to this point can be refrigerated overnight.)
For Topping: Combine bread crumbs, paprika and butter. Stir over medium heat until butter is melted and mixture is combined. Sprinkle on top of eggs.
Bake eggs at 350 degrees F for 30 minutes (more if refrigerated overnight).

While this recipe turned out well, we had to modify the recipe from its original form. We rewrote the directions to be more clear and also reduced the amount of breadcrumbs called for (there was WAY too much topping for the eggs). The flavor was good, consistency was creamy with a crunchy topping. You could easily add in other sauteed vegetables (onions, peppers, etc), or substitute sausage or bacon for the ham. If the top starts to brown too quickly when in the oven, place a sheet of aluminum foil over it (not tightly). To cut this recipe in half, bake it in a greased pie plate.
