ingredients
1 1/2 teaspoon active dry yeast
3/4 cup lukewarm water (about 100 degrees F)
2 1/2 cups all-purpose flour
2 tablespoons olive oil
2 1/4 teaspoons salt
1/4 cup freshly grated Parmesan cheese
1/4 teaspoon freshly ground black pepper
1/8 teaspoon cayenne pepper
directions
Dissolve the yeast in the water in a large bowl. Let stand for about 5 minutes, until the mixture is foamy.
Add the flour, olive oil and 1 1/2 teaspoons of the salt; mix by hand using a rubber spatula until a smooth dough forms. Cover the bowl with plastic wrap and let stand in a warm, draft-free place until doubled in size, about 30 minutes.
Preheat the oven to 350 degrees F.
Combine the cheese, black pepper, cayenne and the remaining 3/4 teaspoon salt in a small bowl. Set aside.
Line a large baking sheet with parchment paper.
Divide the dough into 4 pieces and roll each piece on a lightly floured surface into a rectangle about 1/4 inch thick and 14 to 16 inches long. Sprinkle the dough with the cheese mixture and fold in half.
Roll out the dough again to its previous size. Cut the dough into very thin, long strips measuring 1/8 inch wide by about 16 inches long.
Place the strips on the prepared baking sheet and bake for 10 to 12 minutes, or until golden.
Transfer the bread sticks to racks to cool. Serve at room temperature.
