Key Lime Pudding

ingredients
1 package (4 serving size) sugar-free lime gelatin mix
3/4 cup boiling water
1 tablespoon lime juice (Key lime juice is best)
1/2 cup cold water
ice cubes
1 3/4 cup frozen low-fat non-dairy whipped topping
directions
Put the gelatin powder into a large mixing bowl. Add the boiling water and stir until the powder is dissolved.
Add the lime juice. Put the cold water into a two-cup measuring cup. Add ice cubes until the measure is 1 1/4 cups full.
Put the water and ice mixture into a blender or food processor. Add the gelatin mixture and blend until the ice has almost disappeared.
Add non-dairy topping. Blend again until mixed. Pour into serving dishes. Chill until set, about 1 hour.
