A foolproof recipe for tender minute steaks. The pan-fried seasoned steaks are coated in the gravy and finished in the oven.
1 teaspoon garlic salt
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon Old Bay seasoning
1 pound beef minute steaks
1/3 cup self-rising flour
6 tablespoons butter
1 medium onion, sliced
1 cup warm water
Preheat the oven to 400 degrees F.
Combine the garlic salt, salt, pepper, and Old Bay in a small bowl. Mix well then sprinkle the mixture over both sides of the minute steaks. Place the minute steaks in the refrigerator for 20 minutes (or up to 4 hours).
Heat a large skillet over medium-high heat. Sprinkle both sides of the steaks with the flour, shaking off any excess. Add the butter to the skillet. When melted, add the minute steaks and cook for 2-3 minutes per side, or until lightly browned. Transfer the steaks to a baking dish.
Place the onion slices evenly over the steaks.
Add any remaining flour to the butter in the skillet. Cook, stirring constantly, until the flour is incorporated and the mixture is smooth.
Turn the heat to high. Add the water and cook, stirring constantly, until the liquid comes to a boil. Reduce the heat to a strong simmer and cook for 1 minute, stirring occasionally, or until the gravy has thickened.
Pour the gravy over the minute steaks. Cover the baking dish with foil and place in the oven. Bake at 400 degrees F for 35 minutes or until the beef is very tender.
Serve the minute steaks with the gravy.
Make sure the minute steaks are at room temperature before cooking for even cooking.
Use a heavy skillet for even heat distribution when browning the meat.
Don't overcrowd the skillet; cook in batches if necessary to avoid steaming the meat.
Deglaze the skillet after cooking the beef to incorporate the flavorful bits into the gravy.
For a richer gravy, use beef broth instead of water.
Adjust the seasoning of the gravy to taste before pouring it over the minute steaks.
Let the baked minute steaks rest for a few minutes before serving to redistribute the juices.
For a thicker gravy, use a bit more flour or cook it longer to reduce.
Experiment with different herbs and spices in the seasoning for variety.
If the gravy is too thick, thin it with a little more water or broth.
Garnish with fresh parsley or chives for a pop of color and freshness.
Leftover minute steaks can be sliced and used in sandwiches or wraps.
Yes, but self-rising flour helps create a lighter crust due to its leavening agents.
Marinate for at least 20 minutes, but no more than 4 hours for optimal flavor.
Refrigerating helps the seasoning to penetrate the meat, but you can cook immediately if short on time.
Old Bay Seasoning is a blend of herbs and spices that has become a staple in American cooking. It is primarily used on seafood but works well on other foods as well. It should be available at most grocery stores.
The steaks are done when they are very tender and the gravy has thickened.
Yes, sauteed mushrooms can be a great addition to the gravy.
Mashed potatoes, steamed vegetables, or a simple salad complement this dish well.

This was delicious! All I knew was that we were having minute steak for supper. I found this recipe online and loved it! My whole family including a 2 and 4 year old liked it! My husband even commented 3 times on how good it was! I substituted Tony Chaucer Seasoning for the Old Bays seasoning because I didn't have any. I did look online to get an idea of what old bays had in it, so I added a little ground mustard to the tony chaucer to make it at least a teeny bit closer. Loved it! A great meat and potatoes type of meal!
