This dish is a classic Italian-American comfort. Tender cube steaks are breaded and fried to perfection, then smothered in a rich tomato sauce and melted mozzarella cheese.
3 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1 egg
1 tablespoon water
1/3 cup Parmesan cheese, grated
1/3 cup saltine crackers, finely crushed
1/2 teaspoon basil
2 tablespoons vegetable oil
1 can (15 ounce size) tomato sauce
1 tablespoon sugar
1 clove garlic, minced
1/2 teaspoon oregano, divided
3 slices mozzarella cheese, halved
1/3 cup grated Parmesan cheese
6 cube steaks (4 ounce size)
In three shallow bowls, combine flour, salt and pepper; beat egg and water; and combine Parmesan, saltines and basil.
Dip steaks in flour mixture and egg mixture, then roll in cheese mixture. In a large skillet, heat 1 tablespoon of oil over medium high heat. Brown three steaks on both sides.
Remove to a greased 13 x 9 inch baking pan. Repeat with the remaining steaks, adding additional oil as needed. Bake, uncovered, at 375 degrees F for 25 minutes. Drain any pan juices.
Combine the tomato sauce, sugar, garlic and 1/4 teaspoon of the oregano. Pour over steaks. Bake 20 minutes longer.
Place mozzarella cheese on steaks. Sprinkle with Parmesan cheese and remaining oregano. Return to the oven for 5 minutes or until cheese is melted.

There was no left overs ;o) I improvised a lil as I didn't have crackers so used toasted bread crumbs and didn't have mozzarella cheese so used pepper jack cheese. It still came out pretty yummy
