The five-spice marinade tenderizes the London broil before it hits the grill, and infuses every bite with flavor.

serves/makes:

ready in:
  2-5 hrs

ingredients

1 1/2 tablespoon Chinese five-spice powder
2 cups red wine
3/4 cup hoisin sauce
1 tablespoon minced garlic
2 pounds London broil

directions

Combine the five-spice powder, wine, hoisin sauce, and garlic in a non-reactive container or large zip-top plastic bag. Mix well, then add the London broil. Turn to coat the meat in the marinade. Place the container in the refrigerator and let marinate for 4-6 hours.

When ready to grill, preheat the grill to high heat.

Remove the meat from the marinade, reserving the marinade. Place the meat on the grill and let sear over high heat for 3 minutes per side.

Reduce the grill temperature to medium-low. Grill the London broil for 25 minutes, turning the meat frequently.

Meanwhile, transfer the marinade to a saucepan and bring to a boil over medium-high heat. Cook until the sauce has reduced and thickened a bit.

Remove the meat from the grill and let stand for 10 minutes. Slice the meat across the grain. Serve with the sauce.

recipe tips

For added flavor, toast the five-spice powder in a dry skillet before using it in the marinade.

Let the meat come to room temperature before grilling for more even cooking.

If using a charcoal grill, wait until the coals are covered with white ash before cooking.

Let the meat rest after grilling to allow the juices to redistribute.

If you prefer a spicier marinade, add a pinch of cayenne pepper or crushed red pepper flakes to the mixture.

Grill some fresh pineapple slices alongside the London broil for a sweet and tangy side dish.

Do not reuse any marinade that hasn't been boiled after marinating.

common recipe questions

What is Chinese five-spice powder?

Chinese five-spice powder is a blend of five spices - typically star anise, cloves, Chinese cinnamon, Sichuan pepper, and fennel seeds. It adds a unique and aromatic flavor to dishes. If you don't have any on hand you can make your own.

Can I marinate the London broil for longer than 6 hours?

Marinating the London broil for longer than 6 hours can make the meat mushy due to the acids in the marinade. Stick to the recommended marinating time for best results.

What can I substitute for hoisin sauce?

If you don't have hoisin sauce, you can substitute it with a mixture of soy sauce, honey, and a touch of Chinese five-spice powder for a similar flavor. Or, make homemade hoisin sauce to keep on hand.

Should I pierce the London broil before marinating?

Piercing the meat with a fork or knife before marinating can help the flavors penetrate deeper into the meat. However, it's not necessary for this recipe.

Can I use a different cut of beef?

While London broil is ideal for this recipe, you can use other cuts like flank steak or sirloin steak. Just adjust the cooking time accordingly based on the thickness of the meat.

How do I know when the London broil is done grilling?

Use a meat thermometer to check the internal temperature of the meat. For medium-rare, it should register around 130-135 degrees F. Let the meat rest before slicing to allow for carryover cooking.

Can I grill the London broil on a stovetop grill pan?

Yes, if you don't have an outdoor grill, you can use a stovetop grill pan. Make sure it's well heated and greased before grilling the meat.

How should I slice the London broil?

Slice the London broil thinly against the grain. Cutting against the grain shortens the muscle fibers, resulting in a more tender piece of meat.

How do I store and reheat leftovers?

Store the london broil in an airtight container in the refrigerator for up to 3 days. Reheat the meat and sauce gently in a skillet.

Can I freeze this recipe?

Once cooked this recipe doesn't freeze well. Instead, you can freeze the meat in the marinade. Thaw in the refrigerator and then cook as directed.
