Slow Cooker Beef, Tomato, And Macaroni Dinner

ingredients
2 1/2 tablespoons olive oil
1 1/2 pound sirloin steak, cut in cubes
1 Vidalia onion, chopped
2 cans (15 oz size) diced tomatoes, undrained
2 packages (16 ounce size) elbow macaroni
seasoned or garlic salt to taste
black pepper, to taste
directions
Heat the olive oil in a skillet over medium heat. Add the steak and onion. Cook, stirring, until the beef is browned and the onion is soft.
Place the steak and onion in the crock pot. Add the undrained tomatoes.
Cover the crock pot and cook on high heat for 1 hour.
Cook the pasta as directed on package. Drain well. Reduce the crock pot heat to low. Stir in the cooked pasta and cook for 1 more hour or until the steak is tender. Season to taste with salt and pepper.
Serve hot.

As is, this is a decent starting point. The changes that I made were to just sear the beef, before transferring to the slow cooker. In the same pan, I added a few knobs of butter (instead of olive oil), and sweated down the onion, with thin cut green pepper and white mushrooms. Layer this over the beef, and then the tomatoes. Slow cooked on high for 45 mins, added the macaroni and 1 can of tomato puree. Seasoned with oregano, basil, minced garlic, black pepper and a pinch of kosher salt. Stir well, and let simmer on low for 45 mins. I may try topping it in the bowls with mozzarella, and browning it quickly under the broiler, next time.
