Bombay Rice Salad

ingredients
2 cups brown rice, uncooked
1/4 cup peanut oil
1/2 cup fresh orange juice
2 teaspoons chili sauce
1 teaspoon grated fresh ginger
2 teaspoons garam masala (optional)
1 tablespoon cider vinegar
1/2 cup raisins
1 trimmed celery stick, chopped finely
1 medium carrot, grated
1/2 cup unsalted roasted cashew nuts, roughly chopped
directions
Cook rice in boiling salted water, uncovered 25 minutes or till tender, drain.
Meanwhile combine oil, juice, sauce, ginger, garam masala and vinegar in small bowl; add to hot rice. Stir in raisins, celery, carrot and nuts.
Serve warm or cold.
