An unusual blend of dressing ingredients makes this corn salad a winner. It's made with honey mustard, Italian salad dressing, chili powder, corn, tomatoes, bell pepper, and red onion.
1/4 cup honey mustard
1/4 cup Italian salad dressing
1 teaspoon chili powder
2 cans (15 ounce size) corn, drained
2 cups ripe tomatoes, diced
1 medium green bell pepper, chopped
1 1/3 cup red onion, chopped
Combine the honey mustard, salad dressing, and chili powder in a bowl until smooth. Set aside.
In a large bowl, combine the drained corn, diced tomatoes, chopped bell pepper, and chopped red onion. Stir in the salad dressing mixture and toss gently to coat the vegetables.
Chill the salad until ready to serve (20 minutes minimum).

Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
A can of cream of mushroom soup can be a real dinner saver. It works great in casseroles and can turn into a sauce or gravy in a pinch.

This goes great with something spicy or fried. It's like fresh, natural natural ingredients to go with the cooked main dish in your Southwestern meal. Try it!

This was good! A nice side dish to go with something fried or greasy. Cool, fresh vegetables provide a nice contrast to that kind of entree item.

I was a little unsure about the odd combination of honey mustard, Italian dressing, and chili powder in this recipe. I'm pleased to say that after letting the flavors meld for a few hours it was a really good dish! Not sure what strange chemical reaction takes place but it all tasted delicious!
