Not to be confused with evaporated milk, sweetened condensed milk is very sweet (and very sticky) and used primarily in desserts.

Corn, cucumber, cherry tomatoes, and arugula are tossed with a light vinaigrette. Delicious served at room temperature or lightly chilled.

3 tablespoons balsamic vinegar
1 tablespoon olive oil
1 tablespoon water
1/4 teaspoon black pepper
1/8 teaspoon salt
4 cups fresh corn kernels
2 cups diced cucumber
2 cups halved cherry tomatoes
2 cups coarsely chopped trimmed arugula
1/2 cup diced part-skim Mozzarella cheese
1/3 cup chopped fresh basil
Combine the vinegar, oil, water, pepper, and salt in a small bowl or shaker bottle. Whisk or shake until well combined.
Add the corn, cucumber, tomatoes, arugula, cheese, and basil to a large bowl. Drizzle with the dressing mixture and toss well to combine.
Serve immediately or chill before serving.

Served this chilled as a side to ribs for the 4th of July. Everyone really enjoyed it.

I was looking for a light and refreshing salad to go alongside a hearty steak. This recipe was perfect! The vinaigrette was flavorful but didn't overpower the fresh ingredients in the salad. If you can't get arugula you can substitute spinach.
