1 pound boiling potatoes, unpeeled, diced
1/2 pound diced carrots
1/2 pound diced white turnip
1/2 pound diced parsnip
1/3 pound diced celery, including leaves
1/2 pound thinly sliced cabbage
1 ham bone
1/2 pound fresh green beans, cut into 1-inch pieces
1 pound (before shelling) fresh green peas
1 onion, minced
6 cloves garlic, minced
1 bay leaf
1 sprig fresh thyme, minced
1 sprig fresh rosemary, minced
1/3 teaspoon fresh cracked black pepper, or to taste

directions
Place the potatoes, carrots, turnip, parsnip, celery, and cabbage in the bottom of the crock pot.
Add the ham bone on top, followed by the onion, garlic, bay leaf, thyme, rosemary, and black pepper.
Add just enough water to cover the ingredients.
Cover the crock pot and cook on low for 4-6 hours, or until the vegetables are tender.
Remove the ham bone from the crock pot and cut the meat from the bone (you may need to let it cool slightly before handling it). Cut the ham into small pieces and stir back into the soup (if desired).
Remove and discard the bay leaf, adjust the seasonings if needed (shouldn't need salt with the ham in it) and serve the soup hot.
