1 cup vegetable oil
1 cup flour
1 1/2 cup chopped onions
1 cup chopped celery
1 cup chopped bell peppers
4 cups Savoy cabbage, julienned
2 pounds smoked ham hocks
1 1/2 teaspoon salt
1/4 teaspoon cayenne pepper
3 bay leaves
7 cups chicken stock
1 tablespoon Essence
2 tablespoons chopped parsley
1/2 cup chopped green onions
1 tablespoon gumbo file powder
2 cups cooked white rice

directions

Combine the oil and flour in a large cast-iron or enameled cast-iron Dutch oven, over medium heat. Stirring slowly and constantly for 20 to 25 minutes, make a dark brown roux, the color of chocolate. Add the onions, celery, and bell peppers and continue to stir for 4 to 5 minutes, or until wilted. Add the cabbage and continue to saute for 2 minutes. Add the ham hocks, salt, cayenne, and bay leaves. Continue to stir for 3 to 4 minutes. Add the stock and Essence. Stir until the roux mixture and stock are well combined. Bring to a boil, then reduce heat to medium to low. Cook, uncovered, stirring occasionally, for 2 1/2 hours. Skim off any fat that rises to the surface.

Continue to simmer for 30 minutes. Remove from the heat . Stir in the parsley, green onions, and file powder. Remove the bay leaves and ham hocks. Shred the meat from the hocks and place the meat back into the gumbo. Serve in deep bowls with the rice.

    This recipe was fantastic! And I had no problem finding file powder. Not sure why others had trouble, my local walmart had it.

    i agree with the first reviewer.i don't live near nawleans,but i've been to 3 big grocery stores here in denver and no one there has heard of fee- lay powder.i think that with such an odd ingredient one should tell us how to make it or at least what's in it .

    • I guarantee it can be found in Denver. Look for it near the cajun seasonings. You can't make it yourself unless you have access to sassafras leaves - which are probably a bit harder to find than file powder :)

    give me a break, i am a reasonably intelligent 43 year old man and I think I have heard of essence before, but file powder? At any rate, these things will not be found at any regular grocery store and the grocerymen have never heard of them either. Buy using these terms so loosely, I am led to believe that you fancy yourself some sort of chef. Include some sort of explanation and some tips on how to obtain these items.

    • File powder (pronounced fee-lay) is a very common cajun ingredient and a necessity for gumbo. Most large grocery stores should carry it. Also, intelligent people don't usually post rude comments (and we removed the profanity!). Our site is for cooks of all levels, if you have a question about a recipe posted by another cook, then just ask - don't be nasty.
