1 pound dry marrow or pea beans, rinsed in cold water
2 pounds meaty ham bone
3 cups peeled, diced potatoes
3 cups diced celery
2 cups peeled and diced carrots
1/2 cup chopped onion
1 1/2 teaspoon salt
1/2 teaspoon thyme
1/4 teaspoon black pepper
8 cups ham stock or other stock

directions

Combine all the ingredients in the crock pot. Cover the crock pot and cook on low heat for 6-8 hours or until the beans and ham are tender.

Remove the ham bone from the crock pot and place on a cutting board. Let sit until cool enough to handle. Cut off the meat from the bone. Discard the bone, dice the ham and return the meat to the crock pot. Mix well then serve the soup in individual bowls.
