Slow Cooker Ham and Black Bean Soup

ingredients
6 ounces dried black beans, soaked in water overnight
8 ounces cubed ham
1/2 small onion (diced)
1 tablespoon ground cumin (or to taste)
2 tablespoons cornstarch
1 cup cold water
3 tablespoons chopped green onions
directions
Drain the soaked beans and place in the crockpot. Add just enough water to cover the beans.
Stir in the ham, onion, and cumin.
In a small bowl, whisk together the cornstarch and water. Add the the crock pot and stir to combine.
Cover the crock pot and cook on low heat for 6 hours or until the beans are tender.
Add the chopped green onions just before serving.

I made this for my family using the end of a honey ham and they loved it! I didn't have dried black beans, so I opened a can of black beans, rinsed them and used them instead of the dry beans. Delicious!
